Clevelander Hotel, located in the heart of the South Beach Art Deco district is currently recruiting Prep Cooks to work both the Ocean Drive location and at Marlins Park for the 2019 MLB season. The ideal candidate is experienced at providing exceptional service in high-volume casual dining environments and is passionate about serving others. Summary:

The Prep Cook oversees the preparation of ingredients, sauces, dressings, salads and garnishes; for inclusion in menu items; in accordance with Company standards for recipes, quality and presentation.

Duties and Responsibilities:

  • Completes assigned opening, closing and ongoing duties
  • Opens and closes work stations properly and assists others with duties as needed
  • Prepares assigned items according to Prep Lists and par levels set by management
  • Follows Company recipes, guidelines and procedures within in specified time limits
  • Properly measure, weigh, prepare and store items for use on the kitchen line; meat, poultry, fish, etc.
  • Consistently uses a scale, measuring cups, spoons and other devices to ensure proper portion control
  • Minimizes waste of product
  • Accepts and rejects ingredients based on quality
  • Cleans, organizes and maintains cleanliness in the walk in cooler, kitchen dry storage and prep areas.
  • Observes a clean as you go cooking philosophy
  • Stocks and restocks items on the kitchen line as needed
  • Labels food products and rotates according to "first in, first out" principles to maintain shelf life standards and eliminate waste
  • Logs and discards all items that are not used by the defined expiration dates
  • Understands and complies with food safety, sanitation and temperature standards
  • Tracks and reports food waste according to Company policy
  • Performs related duties such as food preparation, dishwashing and dish stocking and cleaning projects as assigned by kitchen managers
  • Reports and documents any observed or known safety hazards, conditions or unsafe practices and procedures to management immediately
  • Practices sanitary and safe food handling by properly following health department regulations and maintaining current state certified Food Handler status
  • Maintains and ensures compliance of all policies and procedures

Other Functions:

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the manager based upon the particular requirements of the Hotel:

  • Maintains a Certified Food Handler designation
  • Operates and clean equipment properly
  • Promptly reports all maintenance issues
  • Properly receives and stores food and other deliveries
  • Consults with kitchen management on a daily basis as well as with other departments that are directly related to the Food & Beverage Department
  • Participates in long range planning
  • Takes every opportunity to amaze the guests
  • Ensures all guests are being treated in an efficient and courteous manner and that all Clevelander standards are being applied
  • Prevent wasted, spoilage and shrinkage
  • Ensure proper receiving and storage procedures
  • Participate in physical inventories

Safety and Security

  • Is knowledgeable of policies regarding emergency procedures and security concerns
  • Practices proper lifting procedures and safe handling of equipment
  • Practices all safety and health procedures to ensure proper food handling at all times

Specific Job Knowledge, Skills and Abilities

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the hob, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities:

  • Must be able to speak and understand the primary language(s) used in the workplace
  • Requires good communication skills
  • Possesses basic computational ability
  • Possesses basic knowledge of banquet set-up

 Physical Demands

  • Most work tasks are performed indoors. Temperature is moderate and controlled by Hotel environmental systems; however, must be able to work in extreme temperatures like freezers (-10 degrees F.) and kitchens (+110 degrees F), possible for one hour or more
  • Must be able to stand and exert well-pace mobility for up to 6 hours in length
  • Must have the ability to bend, squat and frequently lift 60 lbs on a regular and continuing basis, including but not limited to, pots and pans and trays of food or food items
  • Must be able to push and pull carts and equipment weighing up to 250 lbs. occasionally
  • Must have the ability to bend, stoop, squat and stretch to fulfill cleaning tasks
  • Must be able to exert well-paced ability to reach other departments of the Hotel on a timely basis
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity
  • Talking and hearing occur continuously in the process of communicating with guests, supervisors and co-workers
  • The worker is subject to noise. There is sufficient noise to cause the worker to shout in order to be heard above the ambient noise level
  • Vision occurs continuously with the most common visual functions being those of near vision and depth perception
  • Requires manual dexterity to use and operate all necessary equipment

Qualifications

  • High School or equivalent education required 
  • No prior experience required 
  • Food Handler Certification required or as mandated by state law
